An Arabic-style coffee, gently simmered with cardamom, clove, cinnamon, saffron and turmeric, then slowly filtered until clear. Best enjoyed warm and fresh.
Ingredients
Grind the coffee a touch coarser than you would for pour-over
Coffee grounds8 g
Water400 ml
Cardamom2 pods
Cloves2
Cinnamonsmall piece

Method
Bring the water to a boil, then turn the heat to low and keep it at a gentle simmer.
Add the ground coffee. Stir so it does not settle and scorch on the bottom or boil over, and simmer for 8 minutes.
Crack or crush the cardamom pods, then add the cardamom, cloves, cinnamon, saffron and turmeric. Simmer for 2 minutes.
Turn off the heat and let it steep in the residual heat for another 2 minutes, allowing the grounds to settle.
Set the filter paper in the cone and pour slowly to filter out a clear coffee.

Chef's note: Keep it at a gentle simmer rather than a rolling boil, and stir now and then so the grounds never catch on the bottom.
